Vegetarian Cream of Asparagus Soup

Nothing chases away the cold weather better than a bowl of hearty, cream-based soup. Warm up with this delicious cream of asparagus soup, garnished with fresh asparagus tips.

Hi! I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make cream of asparagus soup.

Vegetarian Cream of Asparagus Soup Ingredients

For this recipe you will need:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk
  • 1 bunch fresh asparagus

Prepare the Asparagus

First wash the asparagus. Break of the ends of each stalk. Then, cut the stalks into 1/2-inch pieces. Cook asparagus in a small amount of water until it is tender. This will take about 5 minutes.

Start the Cream Base

In the meantime, place the butter in a saucepan and melt over low heat. Then, add the flour, the salt and the pepper. Stir this together. Now add the milk, and cook while continuously stirring until it thickens. If it starts to bubble, take it off the heat and set it aside.

Reserve the Asparagus Liquid

Take out and drain the asparagus, while reserving the cooking liquid in a measuring cup. You can set aside a few of the asparagus tips aside for garnish at this time. Then put the asparagus back into the pot.

Blend the Cream of Asparagus Soup

Add enough boiling water to cooking liquid to make 1 cup. Pour it into the asparagus and start mixing this up with a hand blender. Slowly add the white sauce a little bit at a time. Continue to blend until the soup is smooth. Heat thoroughly. Pour into a bowl and add the asparagus tips. Season the soup to taste with salt and pepper, and serve.
