Transcript:How to Make Vegetable Gratin

Hi. I’m Chef Roblé for About.com. Today we’re going to learn how to make a vegetable gratin.

Vegetable Gratin Ingredients

And here are our ingredients:
  • 4 plum tomatoes sliced 1/3 of an inch thick
  • 2 white onions sliced thin
  • 2 zucchini rounds sliced about 1/4 of an inch thick
  • 2 yellow squash sliced about 1/4 of an inch thick
  • 2 cups of grated or shredded Parmesan cheese
  • 2 teaspoons fresh thyme leaves chopped
  • 1/2 cup torn fresh basil leaves
Make sure you have plenty of salt, black pepper and extra virgin olive oil.

Mix Vegetables With Oil in Bowl

Grab yourself a large mixing bowl at about 2 tablespoons of the extra virgin olive oil to the bottom of the bowl. Now were going to add all of the vegetables into the bowl. Now are going to add the basil and the thyme into the bowl. Now add half of the cheese, half of the Parmesan cheese into the bowl. Adding one healthy pinch of salt. Add six turns from the pepper mill. Add two more tablespoons of extra virgin olive oil on top. Now let’s get our hands in there and mix everything together.

Add Vegetables and Cheese to Baking Dish

Make sure we’re fully incorporating all of the ingredients. Take a 4 quart baking dish. This is a half hotel pan. Oil the bottom of the dish. Use a piece of the squash to spread the oil around the bottom of the dish. Now, we’re going to take all of the veggies and put them into the bottom of our baking dish. Try to make sure that you spread out nice and evenly and press it down firmly. Go ahead and add the rest of the cheese right on top. Spread out evenly.

Cook in Oven

I’ve covered this with foil and I poked holes in top to allow the moisture to escape as it cooks. We don’t want this to be soggy when it’s done, we want it to be nice and tight. Now I’m going to put it in a 350° oven and let it cook.

Finish Vegetable Gratin On High Heat

So, one hour later at 350°, I’m going to pull this bad boy out and pull off a foil. Look at that, looks pretty nice. So this is what we’re going to do. We’re going to turn the temperature up to 450° and were going to put it back in the oven for another 10 minutes. Would you look at this thing here?

Serving Vegetable Gratin

And here you have your vegetable gratin. So here it is in a bowl. Garnish it with a little bit of thyme. and on a side note, I used 2 cups of cheese in my recipe. You can use as much as 4 cups of cheese. Make a cheesy as you want But I wouldn’t exceed 4 cups. Enjoy.
