Transcript:How to Make a Vegan Tofu Pumpkin Pie

Hi, Cliff Wildman here with Food. Today I'm going to show you how to make vegan pumpkin pie. We're going to use tofu instead of animal products and the results are just as delicious.

For this recipe we'll need:
  • 1/4 teaspoon of allspice
  • 1/4 teaspoon of ginger
  • 1/4 teaspoon of nutmeg
  • 1 1/2 teaspoon of cinnamon
  • 1 can (16 oz.) pumpkin
  • 3/4 cup sugar
  • 1 vegan pie crust
  • 10-12 ounces of soft tofu

Creating the Tofu Pumpkin Pie

First, preheat the oven to 375 degrees.

Now in a blender we are simply going to mix all of our ingredients. So add the tofu, the pumpkin, the sugar and the spices. And we'll cover and blend until those are mixed together thoroughly.

Baking the Tofu Pumpkin Pie

And now we'll take that mixture and simply pour it into the pie crust. And we want to bake that for one hour and once that's done we'll let it sit on a rack for a few minutes and once it's cool enough to handle, we'll chill that in the refrigerator for one more hour before serving.
