Hi! I am Rocky Hunter and I am at Local Sprouts Cooperative Cafe in Portland, Maine. Today, I am going to be talking about baking with tofu and some of the various things that you can do to include it in your cooking projects.
Basic Tips for Baking With Tofu
A couple of tips; first is going to be how we marinate the tofu. Tofu is very porous; it really is comparable to something like a sponge, it really sucks up a lot of flavor. So marinating is going to be really important. Typically, if you want to have a really strong flavor tofu, you might consider marinating overnight in your refrigerator. That, I guess, would bring us to the second tip, flavoring.
Tofu has a very neutral flavor and it really allows you to kind of twist and manipulate it as you cook with it. Flavoring is really up to your taste and the things that you want to add, the varieties that you want to create, you certainly can go several different ways and tofu is so neutral that it will go with you.
Other Basic Tips for Baking With Tofu
My third tip would be find a tofu that works best for you. That's really going to be up to personal preference as far as brand or variety that you like the most. Also, the cooking project that you are going to be working on. I would suggest finding a locally sourced tofu that way that you can to know some of the people who are actually making the food that you are eating.

My fourth tip is to create good texture with the tofu when you are using it. That's really going to be come down to your preparation methods. A couple of things that you might consider trying is when you are going for something a little more firm or crispy, keep in mind how much oil that you are using in the recipe. If you are looking to smooth something out, consider how much moisture or liquid is going to be with the tofu.
Also freezing the tofu overnight and then following it out is going to give it a much chewer medium texture. So if you are looking to substitute it in a meat dish that will really lend itself to having a lot of the same characteristics that meat would have. The possibilities are pretty endless and there is a lot of interesting things that you can do with it. So enjoy!
