Transcript:Slow Cooker Vegetarian Lentil SoupHi, I am Gina Miller with About.com Food and today I am going to make vegetarian lentil soup in a slow cooker. This is a very hearty dish and what makes this lentil soup so great is you can be as creative as you would like, adding many vegetables, and by cooking in the slow cooker, you can set and forget it.
Vegetarian Lentil Soup IngredientsThe ingredients you will need are:
- 2 cups dry lentils (beans)
- 4 cups water
- 8 cups of vegetarian broth
- 1 onion, diced
- 3 stalks of celery, sliced
- 1 cup of fennel, chopped
- 2 carrots, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 teaspoon of oregano
- 1 teaspoon of cumin
- 1 14 oz can of diced tomatoes
- 2 tablespoon white wine vinegar
- 1 tablespoon of red pepper flakes (optional)
Preparing Vegetarian Lentil SoupTo Prepare: Stir together all the ingredients in a slow cooker. Cook on high for (4) four hours or on low for (6-8) six to eight hours. This recipe makes 6 servings.
