Hi, I'm Rachel Edelman, for About.com Food. Today I'm going to show you how to make a healthy dessert - tofu chocolate mousse.Tofu Chocolate Mousse Ingredients
For this recipe, you will need:- 12.5 ounces silken tofu
- 2 ounces dark chocolate squares
- 1/3 cup unsweetened cocoa powder
- 1/4 cup boiling water
- 1 teaspoon vanilla extract
- 2/3 cup confectioner's sugar
- 4 graham cracker bars
Chop the Chocolate Squares
First prepare the chocolate squares. Dark chocolate is an antioxidant, which is part of what makes this dessert healthy. Chop 3 ounces of dark chocolate into very small pieces. Chocolate with a high cocoa butter content will melt and taste the best.Prepare the Tofu
The other healthy ingredient we will be using is silken or soft tofu instead of eggs and heavy cream. It comes in a box and is stored sitting in water.First pour out the water from the box. We only need 12.5 ounces, so I'll cut away a bit that we don't need. The rest, I'll put into a food processor.
Mix the Tofu
If you see that the tofu is stuck, use a scraper to help it along. Turn the food processor back on and keep mixing until the tofu becomes creamy and smooth. You can see how this is a great base for our mousse. Put the tofu aside.Melt the Chocolate
Next we melt the chocolate. In a mixing bowl, pour 1/3 cup of unsweetened cocoa powder and all of the chopped dark chocolate. Add 1/4 cup of boiling water. Mix it all together until you see that all of the chocolate pieces have melted.Since the chocolate is bittersweet, add 2/3 cup of confectioners sugar a little bit at a time.
Flavor the Chocolate
Finally, I'm going to add a teaspoon of vanilla extract for extra flavoring. You can use a variety of flavors in the mousse, such as orange zest, almond extract or even instant coffee.Mix the Tofu Chocolate Mousse
Now, pour the chocolate into the tofu. Use a scraper to get it all in. Turn on the food processor and watch it mix.When it looks like the chocolate has crept up the sides, use your scraper again. One last mix and the mousse is done. You can simply pour the mousse into a bowl and serve.
Mousse Serving Options
Another way to present the mousse is to combine it with some crunch. Crush some graham crackers in a Ziploc bag with a rolling pin. You can also use vanilla or chocolate wafers or your favorite cookies.In a dessert dish, pour two tablespoons of crumbs and then two tablespoons of mousse. Continue to layer until you fill the dish. Add something tasty right on top, such as chocolate crumbles, for an extra special treat.
