Transcript:How to Make Tofu Turkey
Hi, I'm Gretchen Siegchrist for About.com. Whether you are a vegetarian or you are cooking for one, a tofu turkey is an elegant entree for holidays and other special occasions.Tofu Turkey Ingredients
You will need:- 5 blocks of firm tofu
- 1/4 cup fresh herbs (thyme, sage and rosemary)
- 1 tbsp bouillon powder
- 2 tbsp poultry seasoning
Blend the Tofu
Drain the tofu and add it in batches to the blender. Blend the blocks of tofu until they are smooth. Transfer the blended tofu to a large bowl.Prepare the Herbs
Wash and dry the herbs and chop them finely. Add the herbs, the bouillon and the poultry seasoning to the tofu and mix them in.Drain the Tofu Mixture
We will be using the colander to drain the tofu, so you will want to place it over a plate or bowl to catch the water that drips off. Line the colander one layer of cheesecloth. Then, transfer the tofu mixture into the colander. We will want to put some weight on the top to help it drain. I am going to use a plate and a heavy can.Refrigerate the Tofu Mix
Place this in the refrigerator and let it drain for at least 2 hours but up to overnight.Mix the Tofu Turkey Marinated
Now, we will make the marinade. You will need:- 1/4 cup balsamic vinegar
- 1/2 cup red wine
- 1/4 cup fresh herbs
- 1 tbsp bouillon powder
- 2 tsp Dijon mustard
Form the Tofu Turkey
When the tofu is done draining, unwrap the cheesecloth from the top of it. Scoop out the tofu in the center, leaving it about an inch thick around the outsides. Now, fill the cavity that you have created with the stuffing, and then cover it with the tofu you removed earlier.Bake the Tofu Turkey
Transfer the tofu to a greased cooking sheet and brush it with the marinade. Place the tofurkey in the oven at 350 degrees for an hour and a half. Remove it every 15 minutes or so to reapply the marinade. When the tofurkey is finished, carve it and use the marinade, heated up, as a gravy.
