Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make a butternut squash casserole that includes apples and is spiced with a buttery crumb topping.Butternut Squash Casserole Ingredients
For this recipe, you will need:- 1 small butternut squash
- 2 apples
- 1/2 cup brown sugar
- 2 tablespoons cold butter
- 1 tablespoon flour
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Prepare and Cut Squash
First, prepare the butternut squash for your dish. Peel the squash. Remove its seeds. And cut it into large chunks that will then be sliced.Prepare the Apples
Next peel and core the apples into pieces that will also be sliced. I'm going to use a food processor to slice my squash into even pieces. Use the slice blade attachment and be sure it's locked securely in place. Lock on the lid and place the apple slices into the mouth. Turn on the food processor and slice.Assemble the Butternut Squash Casserole
Next slice the large chunks of the butternut squash. Preheat the oven to 350 degrees. Remove the slice attachment on the food processor and pour the sliced squash and apple into 11 by 7 baking dish. Spread out the pieces evenly.Making the Crumb Topping
Now we'll make a crumb topping to go on top. In a separate bowl combine the brown sugar, flour, salt, cinnamon and nutmeg. Cut in four tablespoons of cold butter with a fork until it's crumbly. Sprinkle the crumbs evenly over the sliced squash and apples.Bake the Butternut Squash Casserole
Put the dish into the oven and bake for 45 to 55 minutes. Remove the pan from the oven and serve warm. This makes a sweet side dish at Thanksgiving or for any special fall meal.Thanks for watching. To learn more visit us at food.about.com.
