To get started, you'll need:- large knife
- vegetable peeler
- medium sized eggplant
- salt
Tips for Choosing and Eggplant
The eggplant should spring back when you apply pressure to it. There should be a green stem.Cut the Eggplant
First rinse the eggplant and cut off the stem and the base. Now you need to peel it. You can use a vegetable peeler or take a knife and just cut it down the sides. I use a peeler to get off the last little bits. Now cut fairly thick slices, almost burger-sized.Salt the Eggplant
Lightly salt them and wait for 30 minutes, this helps reduce the moisture inside the eggplant. Rinse the slices and pat them dry.Broil the Eggplant
Spray your broiling pan or baking sheet with non-stick spray and put your slices on. Place the pan 4 to 5 inches beneath the broiler's flame and broil for about 5 minutes. I'm coating them with some extra virgin olive oil mixed with garlic, crushed red pepper and some balsamic vinegar.After another 4 minutes of broiling, take them out. And there they are ready to be eaten! Broiling eggplant is really healthier than breading or frying it.
