Transcript: Avocado Olive Dip

Hi! I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make avocado olive dip.

Avocado Olive Dip Ingredients

For this recipe, you will need:
  • 3 avocados
  • 1 can black olives
  • 1 (4-oz.) can chile peppers
  • 3 green onions
  • 3 tomatoes
  • 2 tsp. minced garlic
  • 3 tbsp. olive oil
  • 1 lemon
  • 1 tbsp finely chopped basil leaves

Remove Avocados From Shells

Cut the avocado lengthwise all the way around. Twist the halves and, using your knife, strike and remove the pit. With a small paring knife, lightly cut the avocado.

With a spoon remove the avocado from the peel and place it in a large mixing bowl. Do this with all but one of the avocados.

Mash the Avocados

Then use a potato masher to mash the avocados until they are smooth. Then, take the last avocado out of its skin. Cut it into small pieces and then add it to the mashed avocado.

Prepare the Olives

Drain the can of olives. If you purchased whole olives, slice them with a paring knife. Add them into the bowl.

Chop the Dip Vegetables

Next, chop the green onions into thin slices. Add them into the bowl. Also cut the tomatoes. Take out the seeds and chop them into small pieces. Add them to the bowl.

Mix the Avocado Olive Dip Ingredients

Then, pour in the garlic, olive oil, and basil leaves. Now, juice the lemon over the bowl.

Mix everything together. Cover with plastic wrap and refrigerate for at least 2 hours. This will help the flavors to blend.

Serve with corn chips and enjoy. Thanks for watching, to learn more visit us on the Web at food.about.com.
