Transcript:How to Make Thai Coconut Brown RiceHi, I'm Jen D'Amore for About.com, and this video is all about how to make Thai brown coconut rice, using Darlene Schmidt's recipe from About.com's Thai Food site.
Ingredients for the Thai Coconut Brown RiceYou'll need:
- 1-1/2 cups of brown jasmine or basmati rice
- 2 cups of good quality coconut milk (not "lite")
- 2 cups of water
- 1/2 tsp. salt
- 2-1/2 Tbsp. dry shredded coconut
- 1 Tbsp. coconut oil
Make the Thai Coconut Brown RiceRub the oil on the bottom of a regular sized pot that has a tight fitting lid. Add the rice, the coconut milk, the water, the salt, and the shredded coconut. Stir, and over high heat, bring it to a bubbling boil. Then reduce the heat to low and cover tightly.
Let it cook for 1 hour, or until all the liquid has been absorbed. Then, turn off the heat, but leave the covered pot on the burner, and let the rice sit for another 5-10 minutes, or until you're ready to eat it.
Tips for Serving Thai Coconut Brown RiceIf you'd like to toast coconut to top it off, dry fry over medium high head, while continuing to stir and move the coconut around, until it turns golden brown. Then fluff the rice, and serve with your favorite entree, mango, or a dusting of toasted coconut.
