Transcript:How to Make Easy Thai Mango PuddingHi, I'm Jen D'Amore for About.com, and this video is all about how to make Thai mango pudding, using Darlene Schmidt's recipe from About.com's Thai Food site.
Ingredients for the Easy Thai Mango PuddingYou'll need:
- 2 medium to large ripe mangoes
- 1 packet, or 3 teaspoons of gelatin
- 1/2 cup hot water
- 1/3 cup white sugar
- 1 cup (good quality) coconut milk -- don't use light versions (if you want, you can substitute 1 cup of evaporated milk or whipping cream)
Make the Easy Thai Mango PuddingCut or scoop out the mango fruit, getting as much of it as possible, and blitz it in a blender or food processor to make a mango puree. Leave the mango in the blender for now, and in a saucepan, heat up the water to a rolling boil. Then, remove it from the heat, and briskly stir in the gelatin. Add the sugar and continue to stir until it is dissolved.
Next, pour this mixture into the blender, along with the coconut milk, and blitz briefly until the ingredients are combined. Then, pour into dessert bowls or cups and place into the refrigerator for between 2 and 24 hours. Serve with cream, fresh fruit, or on its own.
