Transcript:Make Fresh Shrimp Spring Rolls

Hi, I'm Rachel Edelman for Food.

Today I'm going to show you how to make your own fresh spring rolls

Spring Roll Ingredients

For this recipe you will need:
  • 1 Cup of fresh coriander or cilantro
  • 1 Cup of fresh bean sprouts
  • 1 Cup of grated carrot
  • 1 Cup cooked shrimp
  • 1 Package of round, dried, rice rolls or rice paper
  • A large cucumber, sliced into matchstick like pieces
  • 1 Cup fresh sweet basil
  • Soy sauce

Spring Roll Ingredient Prep

First prepare each of the ingredients. Wash the cilantro and roughly chop it with a large knife. Run your knife through it a few times, so there are small pieces to use for the rolls.

Next let's take the cucumber. Wash and peel half of a a cucumber. Cut off the end and slice it in half lengthwise. Remove the seeds and carefully slice the cucumber into thin strips. You may need to cut the strip in half 2 or more times, so they are matchstick like pieces.

Now remove all of the tails of the shrimp. If you don't eat shrimp, you could use slices of cooked chicken instead. Since I'm using large shrimp, I m going to slice each one in half. Pour a tablespoon of soy sauce over the shrimp to season it.

Spring Roll Rice Paper Prep

Now pour hot water into a large bowl, so it's half full. Be sure that the water is not too hot, because you will have to dip your fingers in it. Take one of the rice paper wrappers and place it in the bowl of hot water. You may have to gently press the wrapper down into the water. The rice paper will soften in about 30 seconds. Take out the soft wrapper and spread it out place it on a clean surface to assemble the roll.

Rolling your Spring Rolls

Place the shrimp on the left half of the wrapper, in a horizontal line. Take a few slices of cucumber and lay them on top of the shrimp. Take a small handful of bean sprouts and add it to the roll. Now take a few carrot strips and add them as well. Top it off with some cilantro and a basil leaf.

Now we'll wrap it all up. Take the bottom of the rice paper up over the ingredients. Make sure it's nice and snug. Continue by folding over the right side. Finish it off by tightly folding down the top of the wrapper and tucking it under the roll. Try to keep your folding as tight as possible. The ingredients are seen at one end in this open type of fresh roll.

Serving your Spring Rolls

Serve the spring rolls with a peanut dipping sauce or use other dipping sauces such as hoisin sauce and Thai chili sauce.
