Hi, I'm Elaine Lemm for About.com food and today I'm going to show you 3 ways to use Thai sticky rice from our Thai food site. Three very quick, easy and very delicious recipes.
Sticky Rice Recipes: Thai Rice Pudding
Our first dish we are going to make is a delicious Thai rice pudding. For this, I've got my cooked sticky rice here and to this I am going to add a can of coconut milk, and once that's stirred and broken up a bit, we'll add our spices: vanilla, cinnamon, cloves, nutmeg and a pinch of salt. Stir that in and into that I'm going to add the palm sugar and give that a really good stir. I'm going to have to leave this to cook now until all the coconut milk has been absorbed back into the rice and the palm sugar has dissolved. So all the milk is absorbed and we're ready to serve. So there you have it, a lovely sticky Thai rice pudding. Just to finish it, a little sprinkle of toasted coconut on top, how delicious.
Sticky Rice Recipes: Mango With Sticky Rice
For our next sticky rice dessert, the first thing we need to do is make a sauce. Into a saucepan, I'm going to put the coconut milk, with the sugar, the vanilla, and a tiny pinch of salt. We are going to bring that up to a gentle simmer, but be careful not to boil the milk or you will lose all the coconut flavours. Once the sauce has been simmering for about five minutes, we then need to add the arrowroot and water stir that well, and turn the heat down low. This will take a couple of minutes to thicken. Finally, to serve our dessert, I'm going to put sticky rice into this lovely dish, and over there a pool of this rather tasty sauce, and finish that with really lovely, ripe mango, what a perfect combination. There you are, dessert number two.
Sticky Rice Recipes: Mango Rice Pudding
Our third dessert is a mango rice pudding. The first thing we need to do is to heat the coconut milk, again being careful not to boil. We've got simmering coconut milk, add the sugar, stir this now until the sugar has dissolved and I'm going to add the sticky rice, a good scoop of rice per person and break that into the coconut milk. Once that's added, we are going to add the mango pieces and fold the mango into the rice. So there it is and we're ready to serve. Make sure everyone gets even portions of rice, sauce and mango. Delicious.
