Transcript:Flan de Fresas: Strawberry Flan

Hi! I'm Natasha Levitan for About.com Food. Today I'm going to show you how to make flan de fresas, or strawberry flan.

Strawberry Flan Ingredients

You will need:
  • 1/2 pint fresh, ripe strawberries
  • 3/4 c. granulated sugar
  • 1/2 c. condensed milk
  • 3 eggs

Caramelize the Sugar

Put a heavy skillet or saucepan over medium heat and add 1/4 cup granulated sugar. With the back of a wooden spoon, keep the sugar moving constantly in skillet until sugar is completely melted, and of a rich, medium brown color. Pour caramelized sugar into your ramekin and set aside.

Prepare the Strawberry Flan

Wash the strawberries and remove the stems. Place the strawberries, sugar eggs and condensed milk into a blender, turn it on high and blend until strawberries are minced and all ingredients are mixed thoroughly. Pour the strawberry mixture into the ramekin on top of sugar. Cover each ramekin with aluminum foil.

Bake the Flan in a Ramekin Bath

Heat the oven to 350 degrees. Place each ramekin into a large, open, oven-proof pan. Add very hot water to the pan so that the ramekins are approximately 3/4 in the water. Carefully place the pan on to the middle shelf of the oven and bake for about 45 minutes. Carefully remove the pan with the ramekin, uncover and to allow to cool.

Serve the Strawberry Flan

Once cool, place in refrigerator to chill. When you are ready to serve, run a knife around the ramekin to loosen the flan. Then, place the serving plate on top of each one and flip it over. Garnish with fresh strawberries and serve.
