Hi, my name is Craig Wilson from Tasca restaurant in New York City for About.com Food. Today we'll be cooking atun.Atun Ingredients
For this recipe, you'll need:- number two tuna, seasoned lightly with pepper
- white bean cassoulet
- garlic aioli
White Bean Cassoulet Ingredients
To make white bean cassoulet, combine:- 1/2 can white beans
- 1 teaspoon diced bacon
- 1/2 ounce collard greens
- 1 teaspoon diced peppers
Garlic Aioli Ingredients
You'll use this for dipping when the tuna is seared and finished. For this recipe, you'll need:- 4 whole eggs
- 3 cups oil
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- salt and pepper to taste
Prepare the Garlic Aioli
Beat eggs in a medium bowl with a wire whisk, then stir in the garlic. Gradually add oil in a thin stream, beating constantly until light and creamy. Season with salt and pepper. Stir in the lemon juice, and leave to cool in the refrigerator.Sear the Tuna
We got a hot pan here, very hot and all you want to do is sear the outside of this tuna because you want the inside to be rare. Since our pan is so hot, we'll move it off the stove for a minute.Cook the White Bean Cassoulet
And while were doing that, we can add our white bean cassoulet to the other pan. Put a little olive oil in there.Cook beans for three to five minutes, or until warm.
Slice the Tuna
Make sure this tuna gets an even sear on it, and then we're going to be slicing it down and placing it over the white beans. It's a very simple Spanish dish.Place the beans onto the center of the plate, then drizzle a little olive oil over that. Then take the tuna and slice it down into nice little slices like this. Place it onto the beans.
Serve the Atun
