Transcript:Tips for Making Rice PuddingHi, I'm Stephanie Gallagher for About.com, and today, I'll share with you some tips for making rice pudding.
Three Basic Ingredients to Make Rice Pudding:
Different Types of Rice Create Different Pudding Textures
You can use just about any type of rice for rice pudding - long grain, short grain, medium grain, brown, white, really just about all types work. But each yields a slightly different texture.
For a creamy rice pudding, choose a starchy rice like arborio. This is typically the rice of choice for risottos, because it slowly releases its starch while cooking. That's the same property that makes rice pudding made with arborio rice so creamy.
For a more textural rice pudding, use a basmati or jasmine rice, like this brown basmati rice. You can also use different types of milk - whole milk, low-fat, cream, half and half and even coconut milk or soy milk.
You can make rice pudding on the stove, in the oven, in the slow cooker or even in the microwave. I find the old fashioned stovetop rice pudding to be the creamiest. But if you're in a rush, the slow cooker will produce a very nice rice pudding, and all you have to do is dump in the ingredients, cover and cook for several hours.
Get Creative With Your Rice Pudding FlavorsNow the traditional flavorings for rice pudding are vanilla extract, cinnamon and raisins. But I like to get creative. Try stirring in raisins soaked in rum or making rice pudding parfaits with raspberry sauce and fresh raspberries.
