Transcript:Tips for Cooking Lamb Chops

Hi, I am Anthony for About.com and today I am going to show you how to cook with lamb chops.

Select the Best Lamb Chops

Firstly select your lamb chops from your local butcher and choose chops which 1-1 ½ inches in thickness. Select a chop that has sustainable fat marbling, which will keep the chop moist and tender during the cooking process. Choose a lamb chop that is bright red in color, which will mean it is fresh and more flavorful.

Clean and Trim the Lamb Chops

Check the chops if they have been cleaned and trimmed of excess fat. You may want to trim a little fat off. Just be careful not to remove to much fat as this will keep the chops moist and tender during cooking. Score the fat along the edge of the meat to ensure it doesn’t curl whilst cooking.

Marinate the Lamb Chops

You may choose to marinade or use a dry rub on your lamb chops. Today I am using a simple rosemary, garlic, and olive oil marinade. Remember not to use vinegars or citrus fruits in you marinade if you intend on leaving it over night. Also, only season the meat just before cooking.

Grill the Lamb Chops on High Heat

Get your BBQ or griddle pan as hot as possible. You want to seal in the flavor and keep all the meat juices inside the chop. If you are using a BBQ close the lid and cook on one side for 3-4 minutes. Turn and cook for a further 3 minutes.When is it done?You can test when the chops are done by lightly pressing down on the meat and if it is soft and still springy it is medium rare and if it is hard it is well done.

Rest the Lamb Chops

After you have removed the chops from the heat, place on a plate and cover with aluminum foil and allow to rest for 5 minutes. This will allow the meat juices to spread through the entire chop and they will become juicy and tender.
