Hi, I'm Stephanie Gallagher for About.com, and today, I'll show you how to make an olive salad.

Ingredients for Olive Salad

For this recipe, you will need:

  • 1-1/2 cups chopped pimento-stuffed green olives
  • 1-1/2 cups chopped pitted black olives
  • 1/2 cup chopped roasted red peppers (fresh or jarred)
  • 1/2 cup olive oil
  • 1/2 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 2 Tbsp. drained capers
  • 1-1/2 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. cayenne pepper
  • 1-1/2 Tbsp. fresh lemon juice

Instructions for Making Olive Salad

Now place all of the ingredients in a medium mixing bowl, and stir together until well-combined. Then refrigerate for at least 1 hour. It will keep for up to a week if covered tightly. This olive salad is perfect for eating by itself or on sandwiches.
