Transcript:Quick Tip: How to Make Cheese Sauce for Casseroles

Hi, I'm Stephanie Gallagher for About.com, and today, I'll show you how to make a cheese sauce for casseroles.

Ingredients for Cheese Sauce for Casseroles

To make the sauce, you will need:

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 2 cups milk
  • 8 oz. shredded cheese - you can use any kind of good-melting cheese, cheddar, Swiss, gruyere, Monterey Jack, whatever you like

Instructions for Making Cheese Sauce for Casseroles

Melt the butter in a medium saucepan over medium heat. Add the flour, and whisk until it is well-coated with the butter. When it gets sort of golden brown, like this, that's what you're looking for. Now add the milk, whisking constantly, until the sauce starts to bubble and thicken. It's a good idea to add some salt and pepper, too.

Now add the cheese, and I'm using two kinds of cheese here, but you can use whatever you like. Stir it in, and when the sauce is thick, it's ready to use.This cheese sauce makes a great addition to pasta casseroles, chicken casseroles, rice casseroles and more.
