Transcript:Pecan-Topped Sweet Potato Casserole Recipe
Hi, I'm Stephanie Gallagher for About.com, and today, we're making a pecan-topped sweet potato casserole from our Southern Food site.
Ingredients for the Pecan-Topped Sweet Potato Casserole Filling
For this recipe, you will need:
- 2 large eggs
- 1 cup granulated sugar
- 3/4 cup butter, softened to room temperature
- 1/2 cup milk
- 1 tsp. vanilla
- 3 cups cooked, peeled and mashed sweet potatoes or 3 cups canned sweet potato puree
Make the Filling for the Pecan-Topped Sweet Potato Casserole
Preheat the oven to 350 degrees F. Grease or spray a 2-quart casserole dish with cooking spray. Place the eggs, sugar and butter in a large mixing bowl, and beat with an electric mixer until fluffy.Add the milk and vanilla, and beat well.Now add the sweet potatoes or sweet potato puree, and beat until all the ingredients are well-combined. Pour the mixture into the prepared casserole dish, and set it aside.
Ingredients for the Pecan-Topped Sweet Potato Casserole Topping
To make the topping, you will need:
- 1/3 cup brown sugar
- 1/3 cup flour
- 2 Tbsp. butter, softened to room temperature
- 1/2 cup chopped pecans
Make the Topping for the Pecan-Topped Sweet Potato Casserole
Place all of the topping ingredients in a small mixing bowl, and mix until it forms coarse crumbs. You can use a fork, two knives or sometimes, the best tool to use is just your hands. Break up the butter lightly with your fingers -- you don't want to make a dough, you just want to make the topping crumbly, like this.
Bake the Pecan-Topped Sweet Potato Casserole
Now sprinkle the topping evenly over the sweet potato mixture. Try to cover the sweet potatoes completely.And bake for 45 minutes.This sweet potato casserole makes a terrific side dish for turkey, chicken or ham.
