Transcript:How to Make a Waldorf Rice Salad
Hi, I'm Matt Becht for About.com and today, we're making a Waldorf salad with rice. This salad earns its name from the Waldorf Hotel in New York City, where it was first made. This recipe will take that concept and add rice for a more filling dish. Here's how to make it.Waldorf Rice Salad Ingredients
For this recipe, you will need the following ingredients:- 2 cups of apples of your choice, peeled, cored and diced
- 1/4 cup pineapple juice or apple juice
- 3 cups brown or white rice, cooked and cooled
- 1 cup celery, chopped
- 1 cup walnuts, chopped
- 1/2 cup raisins
- 1/4 cup carrots, shredded
- 3/4 cup vanilla or plain yogurt
- 3/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
Making the Waldorf Rice Salad
First, take a mixing bowl and combine the diced apples with your juice. One by one, blend in the raisins, chopped celery, chopped walnuts, shredded carrots and your cooked rice. Brown rice will cook slower than white rice, but it contains more fiber. Either one will make your salad taste more filling without changing the flavor. Next, in a separate bowl, combine the yogurt, mayonnaise, salt, and cinnamon; stir to blend. Lastly, combine the mayonnaise mixture into the apple mixture. Cover with plastic wrap and refrigerate your Waldorf salad until you're ready to serve. You may like to try the salad on its own or on top of a bed of either Boston lettuce or mixed greens. For a sweeter variation on this recipe, you can coat your apples with 1 tablespoon of sugar before mixing them with the other ingredients.
