Hi, I'm Barbara Jean for About.com. Here's a hot hearty favorite that's a great side dish for any meal. It's called Shortcut Scalloped Potato Casserole. And hash browns are the short to this recipe. No tedious and time-consuming potatoes are needed for this quick and easy recipe.

Ingredients for Shortcut Scalloped Potato Casserole

Here's what you'll need:
  • 1/2 cup or 1 stick of butter
  • 1/2 cup chopped onion
  • 16 ounces frozen hash brown potatoes
  • 1 can condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded mild cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1/4 teaspoon pepper 1 cup of butter cracker crumbs

Instructions for Making Shortcut Scalloped Potato Casserole

First preheat your oven to 350 degrees, and then melt the stick of butter in a large fry pan. Fry the chopped onions and peppers until they're tender. Then fry up the hash browns until they're golden brown. Add the can of mushroom soup and milk. Stir in about ½ a cup of the cracker crumbs. Then pour the whole mixture into a casserole dish. Top it off with the rest of the crackers and bake for 45 minutes. Enjoy!
