Transcript:How to Make Turkey Croquettes

Hi. I'm Krystyna Rittichier with About.com and today I'll show you how to make Turkey Croquettes. Turkey Croquettes are breaded, deep fried, then drizzled with a homemade sauce.

Ingredients for Turkey Croquettes

For this recipe you will need:

  • 3 tbsp Butter
  • 5 tbsp Flour
  • 1 Cup Milk
  • ¼ tsp celery salt
  • ¼ tsp Lemon Juice
  • ¼ tsp Worcestershire Sauce
  • 1 tsp Onion, grated
  • ¼ tsp Salt
  • ⅛ tsp Pepper
  • 2 Cups Turkey
  • Salt and Pepper to Taste
  • ¾ Cup Bread Crumbs
  • 1 Egg, beaten
  • Vegetable Shortening

Instructions for Making Turkey Croquettes

To prepare your sauce, place a saucepan over medium heat. Add the butter to the pan, and heat until the butter is melted. Sprinkle the flour in the pan, stirring constantly until the mixture is smooth. Add the milk, celery salt, lemon juice, Worchestershire sauce, onion, salt and pepper. Stir the mixture frequently as it cooks. The sauce is done when it has thickened and is smooth.

To make the turkey crockettes, combine the turkey, 1 cup of the sauce, and the salt and pepper. Shape the mixture into balls, then dip them into the bread crumbs. Dip the crockettes into the egg, then back into the crumbs.

Cooking Turkey Croquettes

Preheat the vegetable shortening over medium-high heat in a large frying pan or wok until it is liquefied. Test the temperature with a meat thermometer. When the temperature reaches 360 to 370 degrees, deep fry the crockettes until the breading is an even golden color. Place the crockettes on a paper towel to drain.When you are ready to serve, pour the remaining sauce on the crockettes. You can add a small amount of milk if the sauce is too thick.
