Instructions for Making Turkey Croquettes
To prepare your sauce, place a saucepan over medium heat. Add the butter to the pan, and heat until the butter is melted. Sprinkle the flour in the pan, stirring constantly until the mixture is smooth. Add the milk, celery salt, lemon juice, Worchestershire sauce, onion, salt and pepper. Stir the mixture frequently as it cooks. The sauce is done when it has thickened and is smooth.
More Instructions for Making Turkey Croquettes
To make the turkey crockettes, combine the turkey, 1 cup of the sauce, and the salt and pepper. Shape the mixture into balls, then dip them into the bread crumbs. Dip the crockettes into the egg, then back into the crumbs.
Cooking Turkey Croquettes
Preheat the vegetable shortening over medium-high heat in a large frying pan or wok until it is liquefied. Test the temperature with a meat thermometer. When the temperature reaches 360 to 370 degrees, deep fry the crockettes until the breading is an even golden color. Place the crockettes on a paper towel to drain. When you are ready to serve, pour the remaining sauce on the crockettes. You can add a small amount of milk if the sauce is too thick.
