Hi, I'm Abby Feldman for About.com. Sweet potatoes and pecans are a major export of the South and have become the core ingredients of a scrumptious Southern staple – sweet potato casserole. Like pumpkin pie, this comfort dish is most often served over the holiday season, especially at Thanksgiving. Today, we're going to learn how to prepare this American favorite. Let's get started.
Sweet Potato Casserole Ingredients
For this recipe, you will need:
- 3 cups of mashed sweet potatoes
- 1 of cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon of vanilla
- 1/2 cup of milk
- 1/2 cup of melted butter
For the topping, you'll need:
- 1/2 cup of brown sugar
- 1/3 of a cup of flour
- 1/3 of a cup of melted butter
- 1 cup of chopped pecans
Mash Sweet Potatoes and Prepare Casserole
Start by peeling your sweet potatoes. Once peeled, dice the sweet potatoes into small cubes and place into boiling water until soft. A good way to test if they are cooked through is to pierce one cube with a skewer or fork. If it goes through easily, they're done. Once cooked, drain the water out using a colander, place the sweet potato back into the pot and mash until smooth. Now that your potatoes are ready, it's time to prepare the casserole. In a medium-sized mixing bowl, combine the mashed sweet potatoes with the brown sugar, vanilla, milk, and melted butter. Crack the eggs into a separate bowl and lightly beat using a whisk until the yolk and egg whites combine to make a golden yellow color. Pour the beaten eggs in with the rest of the ingredients and mix well until the mixture is smooth. Add a teaspoon of honey if you want an extra burst of flavor.
Bake the Sweet Potato Casserole
Now, grease a 1-1/2 to 2 quart casserole dish and spoon the mixture in evenly across the base. Now for the best part – the crunchy pecan topping! To prepare the topping, combine the brown sugar, sifted flour, melted butter, and chopped pecans. Mix until the topping is smooth. Then, pour the topping mixture evenly over the sweet potato casserole. Pop the casserole into the oven and cook at 350 degrees for 30 to 40 minutes, or until browned. Check on the casserole occasionally to make sure the top of the casserole doesn't get darker than a golden honey color. You'll know the casserole is cooked through when it's bubbling around the edges.
Topping the Sweet Potato Casserole
