Transcript:How to Make Stuffed Peppers With Ground Beef and RiceHi I'm Gina Miller with About.com Food and today I'm making Stuffed Peppers with Ground Beef and Rice. Growing up this dish was one of my favorites. It's down-home comfort food and it's easy to make.
Ingredients for Stuffed Peppers With Ground Beef and RiceHere are the ingredients you'll need:
- 4 bell peppers, any color
- 5 Tbsp extra-virgin olive oil
- 1 medium yellow onion, peeled and chopped
- 1 clove of garlic, peeled and chopped
- 1 lb of lean ground beef
- 1 1/2 cup of cooked rice
- 1 cup chopped tomatoes, fresh or canned (if using can, drain of excess liquid first)
- 1 tbsp chopped fresh oregano or 1 teaspoon of dried oregano
- Fresh ground pepper
- 1/2 cup ketchup
- 1/2 tsp of Worcestershire SauceDash of Tabasco sauce
Instructions for Making Stuffed Peppers With Ground Beef and RiceOk, let's make Stuffed Peppers with Ground Beef and Rice. First bring a large pot of water to a boil over high heat and add several pinches of salt. Then cut the tops off of the peppers 1 inch from the stem.Remove the seeds. Add the peppers to the boiling water and boil for 3 minutes. Then drain and set aside to cool. Next heat 4 tbsp of the oil in a large skillet over medium heat. Add onions and cook until soft and translucent or about 5 minutes.Add the garlic and cook one additional minute. Turn the heat to LOW and add the meat, rice, tomatoes, oregano salt and pepper. Mix well.
Then, preheat your oven to 350 degrees F. Next combine the ketchup, Worcestershire sauce, Tabasco sauce, and 1/4 cup of water in a small bowl. Arrange the peppers in a baking dish and drizzle the remaining 1 tablespoon of olive oil inside the peppers then add the meat and place the ketchup mixture on top. Add 1/4 cup of water to the baking dish and bake for 40-50 minutes.Here's a tip: Instead of using a baking dish, cook the peppers in a bundt pan. It holds the pepper in place and you can use it as a unique serving dish.
