Hi I’m Matt Becht for About.com and today we’re making streusel coffee cake. This recipe comes from the About.com Southern Food site. For the Streusel Topping, You Will Need:
- 1/2 cup of brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup of butter
- 1 teaspoon of cinnamon.
For the Coffee Cake, You Will Need:
- 1 and 1/2 cups all-purpose flour
- 2 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, beaten
- 3/4 cup of sugar
- 1/3 cup of melted butter
- 1/2 cup of milk
- 1 teaspoon vanilla extract.
Mix Ingredients to Form Batter and Streusal Topping
This recipe makes 9 servings in an 8-inch square or 9-inch layer cake pan. Prepare the streusel topping by combining 1/2 cup brown sugar, 1/4 cup all-purpose flour, 1/4 cup butter and 1 teaspoon cinnamon in a small mixing bowl and set aside. Now take a second mixing bowl and combine 1 and ½ cups all-purpose flour, 2 and 1/2 teaspoons baking powder, and 1/2 teaspoon salt. Take a third bowl and add the beaten egg. Use an electric mixer to beat in the remaining 3/4 cup of sugar a little at a time, followed by the 1/3 cup melted butter. Set the mixer aside and pour in the ½ cup of milk and 1 teaspoon vanilla extract. Mix them with a spoon. Finally stir the flour mixture into the egg mixture until the dry ingredients are just moistened.
Pour Cake Batter into a Non-Stick Pan and Sprinkle With Streusal Topping
If you do not have a non-stick pan, you will need to grease the bottom with a little butter. Then dust with flour to prevent sticking. Now pour the cake batter into the pan and spread it evenly. Finally sprinkle the crumble topping over the batter. You may need to use a fork to spread the topping into place. Bake the streusel coffee cake at 375° for 25 to 30 minutes. The cake will be ready when a toothpick inserted into the near-center can be removed cleanly. Cool your fully cooked coffee cake in the pan, set on a wire rack. Cut the streusel coffee cake into squares and serve on a dish.Add Your Own Twist to the Streusel Coffee Cake Recipe
For a variation on this recipe, you can add ½ cup of fresh or frozen blueberries into the batter mixture before spreading it into the pan. You may also like to add ½ cup of chopped walnuts to the streusel topping before baking. Thanks for watching. To learn more, visit us on the web at About.com.
