Transcript:How to Make Southern Jam Cake

Hi, I'm Jen D'Amore for About.com, and this video is all about how to make southern jam cake using a recipe from About.com's Southern Cooking site.

To Make Southern Jam Cake, You'll Need

  • 3 cups sifted flour
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup chopped pecans
  • 1 cup raisins or chopped dates, optional
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 eggs, beaten
  • 1 cup blackberry jam
  • 1 cup buttermilk

For the Cake's Cream Cheese Frosting, You'll Need:

  • 16 ounces cream cheese, softened
  • 1 cup butter, room temperature
  • 2 pounds confectioners' sugar
  • 2 teaspoons vanilla extract
Cream the Butter and Add Jam for to Start the Cake Batter
Preheat the oven to 350 degrees, and grease and flour three 9 inch round cake pans. Sift together the flour, the baking soda, the salt, the spices. In a separate bowl, combine the nuts and raisins, and sift a little of the flour mixture over them. This will keep them from settling to the bottom of the cake when baking. In a separate bowl, cream the butter. Creaming is adding air to make it fluffy. Gradually add the sugar and continue to beat until it's light and fluffy. Add the blackberry jam, and continue to beat until it's incorporated.

Beat the Cake Batter Smooth, Alternatively Adding Flour and Buttermilk

Next, alternate adding some of the flour, and some of the buttermilk, beating the batter smooth after each addition. when everything has been incorporated, add the nuts and raisins, and fold them in. Scoop or pour the batter into the three 9 inch round cake pans, distributing as evenly as possible, and bake at 350 degrees for 20 to 30 minutes, or until you can insert a wooden toothpick into the center of each, and pull it out without anything sticking to it. Let the cakes cool and set in their pans for 10 minutes. Then flip them over onto a cooling rack. They'll need to cool completely before applying any frosting.

Finish the Cake with the Cream Cheese Frosting

To make the cream cheese frosting, cream the cream cheese and the butter until smooth. Creaming is adding air. Then add the the powdered sugar and continue to beat until it looks light and fluffy.Then stir in the vanilla.If your cakes are cool, and you happen to have a lazy susan, frosting will be a breeze. Frost the top of each cake by slapping down a big dollop of frosting, it's easier to work with too much than too little. Hold your spatula in a steady position in the center of the cake, making contact with the frosting, and spin the lazy susan. Gradually move the spatula towards the edge of the cake, pulling the extra frosting with it. Beyond that trick you can improvise, just try to keep a layer of frosting between the cake and the spatula, and be gentle.  Stack the three layers, and work on filling in the sides.
