Hi, I'm Stephanie Gallagher for About.com. And today, we're making Southern cornbread dressing from our Southern Food site.
Ingredients for Southern Cornbread Dressing
For this recipe, you will need:
- 4 oz. butter
- 2 cups chopped onion
- 2 cups finely-chopped celery
- 6 cups crumbled cornbread or cornbread cubes. I like to let my cornbread get a little stale, then cut it into cubes. It absorbs the flavors of the dressing best this way
- 3 cups soft bread crumbs
- 3-4 cups chicken broth
- 2 large eggs, lightly beaten
- 1 heaping Tbsp. dried sage
- 1 tsp. dried marjoram
- 1-1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1 tsp. salt
- 1/2 tsp. freshly-ground black pepper
- 2 cups diced turkey or chicken (that's optional)
Instructions for Making Southern Cornbread Dressing
Preheat the oven to 400 degrees.Melt the butter in a large skillet over medium heat. Add the onions and celery, and cook, stirring occasionally, until the vegetables are softened, but not browned.Place the cornbread cubes in a large mixing bowl. Add the bread crumbs and the celery and onion mixture. And mix well. Now add the broth, eggs, sage, marjoram, thyme, rosemary, salt and pepper, and stir it all together. Add the turkey or chicken if you're using them. And mix well. Transfer the dressing mixture to a 10 x 15 pan, and smooth it over with a spatula. Bake for 20 to 30 minutes. Serve the cornbread dressing with turkey, chicken or ham.
