Transcript:How to Make Slow-Cooker Chicken and Biscuits

Hi, I'm Gina Miller with Food, and today, I'm making slow-cooker chicken and biscuits. This dish is a huge hit at family dinner parties or pot luck picnics. Kids really love it because it's yummy comfort food, and the slow-cooker helps to make it quick and easy to prepare.

Slow-Cooker Chicken and Biscuits Ingredients

Here are the ingredients you'll need to prepare slow-cooker chicken and biscuits:
  • 1-1/2 to 2 pounds of cooked, boneless chicken breasts, cut in large chunks
  • 1/2 cup of chopped onion
  • 1 cup of chopped celery
  • 2 cans of condensed cream of mushroom soup, undiluted
  • 1/4 teaspoon of poultry seasoning
  • 1/2 teaspoon of dried leaf thyme
  • 2 cups of frozen mixed vegetables
  • 1 cup of biscuit mix
  • 1 egg
  • 1/2 cup of milk
  • Salt
  • Pepper

Making the Slow-Cooker Chicken and Biscuits

OK, here's how to prepare your slow-cooker chicken and biscuits. First, layer the chunks of cooked chicken breasts in the slow-cooker. Add the chopped onion and celery. Now, pour the mushroom soup over the chicken. Add the poultry seasoning, thyme, and a pinch of salt and pepper. Cover the slow-cooker and cook on HIGH for 3 hours. Add the mixed vegetables and continue cooking for 30 minutes or until the vegetables are tender. Next, add the egg and milk to the biscuit mix, and blend together. After the veggies are tender, drop spoonfuls of the biscuit mixture on top of the chicken. Here's a tip: If you don't have the ingredients to prepare the biscuit mixture, you can always substitute refrigerator canned biscuits instead. Continue to cook on HIGH for an additional 50 minutes or until biscuits are done. Finally, scoop the biscuits out first, then add a large spoonful of the chicken mixture over the biscuits and serve hot. Now this is really great comfort food, and it serves 6 people.
