Hi, I&'m Matt Becht for About.com and today we're making Spanish rice with ground beef in a skillet. This recipe is from the About.com Southern Food site.Ingredients for the Skillet Spanish Rice With Ground Beef
For this recipe you will need the following ingredients:- 3 slices of bacon
- 1 pound extra-lean or lean ground beef
- 1 medium onion, chopped
- 1/3 cup green bell pepper, chopped
- 1 clove of garlic, finely minced
- 1 14.5 ounce can of diced tomatoes
- 1 cup water; 1/2 cup ketchup
- 3/4 cup long grain rice, uncooked
- 1 teaspoon chili powder
- 2 teaspoons sugar
- 1/2 teaspoon Worcestershire sauce
- salt and pepper to taste
- shredded Monterey Jack cheese as a garnish
Prepare the Skillet Spanish Rice With Ground Beef
In a large skillet, cook the bacon until crisp and dry it on a paper towel. With 1 teaspoon of bacon grease still on the skillet, brown the ground beef over medium heat, stirring and breaking up as it cooks. If you want a meal with less fat, try ground bison meat.Next add the chopped onion and green pepper to the skillet. Cook until the vegetables are softened. Now add your minced garlic and stir for 1 minute. Continue stirring as you add the remaining ingredients: tomatoes, ketchup, water, rice, chili powder, sugar, salt and pepper, and Worcestershire sauce.
Once the liquid comes to a boil, reduce the temperature to medium-low, cover the skillet, and cook for approximately 30 minutes. Check on the rice occasionally to see when it has expanded and softened. You can also refer to your rice package's cooking directions. If swapping out long grain rice for a brown rice variation, you may want to cook longer and use more water in the recipe.
Remove the skillet from heat when the rice is fully cooked. Spoon out a helping and garnish with your shredded cheese and cooked bacon, that you can crumble if desired.
Variations on Skillet Spanish Rice With Ground Beef
