Transcript:How to Make Seafood Gumbo
Hi, I'm Mike Jordan, and today we will be making seafood gumbo using a recipe from About.com's southern food site.
Ingredients for Seafood Gumbo
You will need:
- 1/4 cup roux
- 2 large onions, chopped
- 3 cups okra, chopped
- 2 tablespoons of cooking oil
- a 14.5 ounce can of stewed tomatoes
- 3 cloves of garlic minced
- 2 quarts water
- black pepper
- cayenne pepper
- 1/2 cup parsley, finely chopped
- 6 to 8 green onions, finely chopped
- 2 pounds shrimp
- 1 cup of oysters
- 1 cup of crab meat
- crab claws
- and hot cooked rice
Instructions for Making Seafood Gumbo
With the roux in a large skillet, add the shrimp and cook for a few minutes until the shrimp turns pink. Once cooked, set aside. Heat the cooking oil in a large stockpot then add the chopped okra and onions. When the okra starts to soften, add the stewed tomatoes and garlic. Mix ingredients together and cook for a few minutes longer.
Additional Instructions for Making Seafood Gumbo
Then add the salt, black pepper, cayenne pepper, and water. Add the shrimp and roux mixture to the pot and simmer for about 10 minutes. Then add the oysters, crab meat and crab claws, and simmer for another 15 minutes. Finally add the parsley, green onions and simmer for another 15 to 20 minutes. Serve with hot cooked rice and enjoy.
