Transcript:How to Make Sandy's Chicken and Dumplings

Hi, my name is Krystyna Rittichier and I'm here for About.com. Today we're making Sandy’s chicken and dumplings, using a recipe from About.com's Southern Food site. This chicken and dumplings recipe is simple to do, and takes under 2 hours to make.

For This Chicken and Dumplings Recipe You Will Need:

  • 1 Whole Chicken 3 lbs
  • 4 cups Water
  • 2 cups Chicken Broth
  • 1 Carrot, chopped
  • 1 Medium Onion, peeled and quartered
  • 1 Stalk Celery, chopped
  • ½ tsp Salt
  • 1 cup Milk
  • 1/4 tsp Pepper

Dumpling Ingredients Include:

  • 2 cups Flour
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 3 tbsp Shortening
  • ¾ cup Buttermilk

First Prep the Chicken and Dumplings Base

In a large dutch oven, place the chicken, the water, the broth, the carrot, onion, celery and salt. Bring to a boil, then lower the heat, cover and simmer for 70 minutes. Remove the chicken and place on a cutting board to cool. Strain the celery and onion pieces and reserve the broth. Remove all the bones and skin from the chicken, then cut the chicken into 1 inch pieces. Set these aside.

Mix Together Dumpling Ingredients to Form a Dough

To make the dumplings, get a large mixing bowl and add the flour, baking soda, and salt. Mix these together, then cut in the shortening until well blended. Add the buttermilk and stir just until the dry ingredients are moist. With this dough, the less you touch it, the more fluffy the dumplings will be. Place the dough on a flowered surface and knead only 4 or 5 times. Pat the dough down to ¼ inch thick. Pinch off 1 ½ inch piece of dough for each dumpling.

Boil the Dumplings in the Broth Then Add the Chicken

Bring the chicken broth to a boil. Stir in the milk and pepper, and add additional seasonings if desired. Drop the dumplings, one or two at a time into the boiling broth. When all the dumplings are added, reduce the heat to medium low. Cook dumplings for 8 to 10 minutes, stirring occasionally to prevent the dumplings from sticking together. Add the chicken pieces and continue cooking until the whole meal is hot. You can serve immediately.
