Rotel Chicken Spaghetti is a great chicken recipe that is perfect for when you have to feed a family of four and don’t want to spend the money on going out. This recipe saves money and time and makes plenty of leftovers, so let’s give it a try.

Ingredients for Rotel Chicken Spaghetti

For this recipe, you’re going to need:

  • 4 thinly sliced chicken breasts, cooked and cubed
  • 1 package vermicelli spaghetti (7 to 8 oz)
  • 2 large bell peppers, chopped
  • 2 onions, chopped
  • 2 celery stalks, chopped
  • 8 ounces sliced mushrooms
  • 1/2 cup butter
  • 2 cans Rotel tomatoes, diced with green chilis added (approximately 10 oz each)
  • 2 tablespoons Worcestershire sauce
  • 1 pound cheddar cheese, grated

Instructions for Making Rotel Chicken Spaghetti

Let’s start by cooking and seasoning the chicken. If you’re crunched for time, my advice is to use boneless, skinless chicken breast. So, in a twelve inch skillet, cook the chicken over medium heat until golden brown. Now, transfer the breasts to a cutting board and cube it. Set it aside. Save the broth to a pot and set it aside for now as well.

Next, take the pot of boiling water and cook your vermicelli in it according to the directions on the package. Once it’s done, drain it but don’t rinse off the broth. This is where the flavor is.
