Hi there, Abby Feldman for About.com. What's not to like about quiche? It's delicious, healthy, and it's perfect for every meal: breakfast, lunch and dinner.What's really great about quiche is you can make it your own by adding your favorite ingredients. Today we're gonna be making quiche squares, the appetizer for any occasion. Let's get started.
Ingredients for the Quiche Squares
For this recipe, you'll need:- 2 sheets of refrigerated pie crust
- 1 egg white, slightly beaten
- 16 ounces of sliced bacon
- 1 cup of grated Swiss cheese
- 1 cup of grated Cheddar cheese
- 1 cup of grated Monterey cheese
- 6 large eggs
- 1 onion, finely chopped
- 4 cups of light cream or half-and-half
- 1/2 teaspoons of salt
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of pepper
- a pinch of cayenne pepper
Prepare the Quiche Squares
Pre-made refrigerated pie crusts often taste just as good as homemade and can save you a lot of time and mess. Today we're going to use them in this recipe.On a lightly floured surface, roll out the pastry dough to a rectangle measuring about 18 x 15 inches. Then, line a 15 x 10 jelly roll pan with the pie crust and brush the bottom and sides with egg white. Then, place in the refrigerator until firm.
Now to preparing the mixture. Fry the bacon in a heavy skillet until it's nice and crisp. When this is done, dab the bacon with paper towel to remove excess oil. Next, crumble the bacon with your hands or a knife and scatter along the bottom of the pie shell.
Measure one cup of each cheese and sprinkle over the layer of bacon. Now, onion adds flavor to any recipe and are perfect for quiches. Chop a large onion finely and toss it on top of the cheese.
Last but not least, we cannot forget the most important ingredient: the eggs. Whisk the eggs, cream, salt, nutmeg, pepper, and cayenne in a bowl and then gently pour over the layers of bacon, cheese and onion.
Bake and Serve the Quiche Squares
Place the pan in an oven preheated to 375 degrees for 35-40 minutes, or until the quiche is golden brown and firm. When ready, remove from the oven and place on a rack for about 10 minutes to cool. Now, cut into squares and arrange them any way you like.If you're serving this dish as an appetizer, why not cut the quiche into mini, bite-sized pieces and serve with toothpicks?
