Hi, I'm Stephanie Gallagher for About.com, and today, we're making a potato casserole with andouille sausage.
Ingredients for Potato Casserole With Andouille Sausage
For this recipe, you will need:
- 2 lbs. small white potatoes, scrubbed and cut into a 1/2-inch dice
- 5 Tbsp. butter, divided
- 1 medium red or green bell pepper, diced
- 1 medium onion, diced
- 8-12 oz. andouille sausage, sliced
- 1/3 cup flour2-1/4 cups milk
- 6 oz. shredded cheddar or cheddar Jack blend cheese, divided
- 1/2 tsp. salt and 1/4 tsp. freshly-ground black pepper
- 1/2 tsp. Cajun seasoning
Instructions for Making Potato Casserole With Andouille Sausage
Preheat the oven to 350 degrees.Place the potatoes in a large pot and cover with water by one inch. Bring to a boil, cover, and let the potatoes boil over medium-low heat until tender, about 12-15 minutes. Drain and set aside.Melt 1 Tbsp. of the butter in a large skillet over medium-low heat. Add the peppers, onions and sausage, and cook until the vegetables are softened.
Remove the mixture from the pan, and melt the remaining 4 Tbsp. of butter in the same skillet over medium-low heat. Add the flour, and stir to coat it with the melted butter. Now add the milk, and cook until the mixture thickens.

Now add all by 1/2 cup of the cheese, and stir until it melts. And add the salt, pepper and Cajun seasoning. Add the vegetables and sausage to the cheese sauce. Then add the potatoes, and mix well.
