Transcript:How to Make Pork Tenderloin With Chipotle-Chili Sauce

Hi, I'm Stephanie Gallagher for About.com, and today, we're making pork tenderloin with chipotle chile sauce from our Southern Food site.

For This Pork Tenderloin and Chipotle-Chili Recipe, You'll Need:

  • 2 pork tenderloins, about 1 to 1-1/2 lbs. each
  • salt and pepper, to taste
  • 3 Tbsp. olive oil, divided
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 10.5 oz. can condensed beef broth
  • 1 10.5 oz. can condensed chicken broth
  • 1 chipotle chile pepper in adobo sauce, finely chopped with 1-2 tsp. of the sauce
  • 3/4 cup peach or apricot preserves
  • Juice of 1/2 lemon
  • 2-1/2 tsp. cornstarch mixed with 1 Tbsp. cold water

Sear the Pork Tenderloin Then Place in the Oven for Baking

Preheat the oven to 400 degrees. Season the pork tenderloins with salt and pepper. Heat 1 tablespoon of the olive oil in a large, oven-proof skillet over medium heat. Add the pork tenderloins, and brown on all sides. There's no need to cook the pork through. You just want to get a crust on it. Place in the oven for 20 to 28 minutes, until the internal temperature of the pork reads 145 degrees.

Cook the Chipotle-Chili Sauce While the Pork Bakes

Meanwhile, heat the remaining 2 tablespoons of the olive oil in a saucepan. Add the onion, and cook until yellow in color. Add the garlic, and cook 1 minute longer. Add the beef broth, chicken broth, chipotle chile with adobo sauce, preserves and the lemon juice. Bring the mixture to a boil, then reduce the heat to medium low, and simmer for about 5 minutes. Add the cornstarch and water mixture, stir, and let it come to a boil. Cook until the sauce thickens. It'll take about 3-5 minutes. Season with salt and pepper and remove from the heat. Slice the pork tenderloins and serve topped with the chipotle chile sauce.
