Transcript:How to Make Pork Chop Broccoli BakeHi, I'm Stephanie Gallagher for About.com, and today, we're making a pork chop broccoli bake from our Southern Food site.
Ingredients for Pork Chop Broccoli BakeFor this recipe, you will need:
- 4 boneless pork chop cutlets
- 1 egg, beaten
- 2 Tbsp. milk
- 1/4 cup bread crumbs or crushed Saltines
- 2 tsp. curry powder
- 1-2 Tbsp. butter
- 1 10 oz. package frozen chopped broccoli, thawed
- 8 oz. mushrooms, sliced
- 4 tomatoes, sliced
- 1/2 cup heavy cream
Instructions for Making Pork Chop Broccoli BakePreheat the oven to 350 degrees. Using a meat mallet or a rolling pin, pound the cutlets until they're an even half-inch thickness. You can really use any heavy kitchen tool for this - even the back of a small frying pan.Now beat the egg and milk together in a shallow bowl.Pour the bread crumbs onto a plate. Add the curry powder, and stir, then spread them in an even layer. Dip each pork cutlet first in the egg, then in the bread crumbs, like this. And then transfer to a plate.
Okay, now melt about 1 tablespoon of butter in a large skillet over medium-high heat. Add the pork chops, and brown on each side. It'll take about 3 minutes per side. Now remove the pork chops to a greased casserole dish. Add a little more butter - maybe 1 tablespoon - to the same skillet, and add the mushrooms and tomatoes. Cook them over medium heat until the mushrooms are lightly browned and the tomatoes are tender.
Ok, now scatter the broccoli around the pork chops, and spoon the mushroom-tomato mixture over top. Pour the cream over all. Bake the pork chops for 45 minutes or until cooked through.
