Hello, this is David Dietrich with About.com, In this video we will be in the kitchen cooking. Let's see what we are making today. A sweet and savory Pineapple upside down cake.

Ingredients for Pineapple Upside Down Cake Topping

The ingredients you are going to need for the upside-down topping are:
  • ¼ cup butter
  • 2/3 cup packed brown sugar
  • 9 slices pineapple in juice (from a 14-oz can), drained
  • 9 maraschino cherries without stems, if desired
  • And 1/4 cup pecan halves, if desired

Ingredients for Pineapple Upside Down Cake

The ingredients you are going to need for the cake are:
  • 1 1/3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup butter (softened)
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • And 1 egg
  • You are also going to need a 9-inch square baking pan and a large bowl.

Instructions for Making Pineapple Upside Down Cake

First we are going to make the upside-down topping.Heat your oven to 350 degrees.Melt butter, and pour into 9-inch pan making sure it coast the bottom evenly. Sprinkle brown sugar evenly over the melted butter. Place and arrange pineapple slices in one layer over the brown sugar. Place one cherry in the center of each pineapple slice.Place and arrange pecan halves surrounding the pineapple slices on the brown sugar.

Cake Batter for the Pineapple Upside Down Cake

Next we'll prepare the cake batter. In a large bowl, combine flour, sugar, butter, baking powder, salt, milk, and egg with an electric mixer.Beat on low for 30 seconds, scraping the bowl constantly to ensure mixing; then, beat on high speed for 3 minutes, scraping the bowl occasionally.Pour cake batter evenly into your 9-inch pan over your upside-down topping.Next, place in oven and bake for 50 to 55 minutes or until a toothpick inserted into the center comes out clean.

Once your cake is done baking, remove from oven and immediately and place a heatproof serving plate upside-down over the pan. Turn the pan, with the plate, over, or upside-down.
