Ingredients for Pina Colada Cake

To make a pina colada cake, you will need:
  • 1 box of yellow cake mix
  • 1 3.4-oz package instant vanilla pudding mix
  • 1 15-oz can cream of coconut
  • 1/2 cup plus 2 tbsp rum
  • 1/3 cup vegetable oil
  • 4 eggs
  • 1 20-oz can crushed pineapple, drained
  • 1-1/4 cups whipped cream for garnish
  • And any other garnishes you'd like, like maraschino cherries or toasted coconut

Instructions for Making Pina Colada Cake

Preheat the oven to 350 degrees Fahrenheit, and spray a 9x13 pan with nonstick cooking spray.In the bowl of a large stand mixer, combine the cake mix, pudding mix, 1/2 cup of the cream of coconut, 1/2 cup of the rum, the vegetable oil, and the eggs.

Mixing the Ingredients for Pina Colada Cake

Turn the mixer on and gradually bring it to medium speed, and beat the cake mix for two minutes, until it's well-combined and free of lumps. After it's mixed, add the drained crushed pineapple. Stir the pineapple into the cake batter until everything is well-mixed.Pour the batter into the prepared cake pan.

Baking the Pina Colada Cake

Bake the cake at 350 degrees for 40-50 minutes, rotating it halfway through baking so it bakes evenly. The cake is done when it's golden brown, the edges are pulling away from the sides of the pan, and it springs back when touched lightly.While the cake is still warm, take a skewer or toothpick and poke holes all over the top of the cake. Combine the remaining cream of coconut and the remaining 2 tablespoons of rum in a small bowl and whisk them together. Pour the cream of coconut and rum mixture all over the cake, letting it soak into the holes that you poked. It may not all disappear at once, but allow it to sit and cool and over time the liquid will be absorbed. When the cake is cool, whip the cream until it reaches firm peaks. Spread the whipped cream all over the top of the cake in a thick layer.

Garnishing the Pina Colada Cake

Once the cake is covered with cream, garnish it with whatever decorations you'd like. I suggest toasted coconut, pineapple rings, or maraschino cherries. This pina colada cake has a lovely light texture and a refreshing tropical flavor.
