Hi I am Gina Miller with About.com food; today I'm making a Southern comfort food favorite … the perfect Mac and Cheese.Information About Mac and Cheese
No matter what age you are, I can't think of anyone who doesn’t love Macaroni and Cheese. Now this is a little more sophisticated version, and I'm only using 5 ingredients for simplicity. But don't worry you won't loose that yummy creamy comfort feeling.Ingredients for the Perfect Mac and Cheese
Here are the ingredients you'll need:- 1 lb of elbow macaroni medium size
- 3 cups, or 12 ounces of grated Gruyere cheese
- 3 cups of Half and half cream
- 4 large egg yolks
- 4 Tablespoons of unsalted butter melted
Instructions for Making the Perfect Mac and Cheese
Now let's prepare the Perfect Mac and Cheese. Preheat your oven to 325 F. Bring a large pot of salted water to a boil over med high heat and cook the macaroni according to package directions, today we'll be cooking for 6 minutes. Drain and rinse the pasta with cool water. Pour the pasta into a bowl and toss with 2 2/3 cups of the grated Gruyere cheese. Hold 1/3 cup of the cheese for later.Here is a tip: You can use any type of cheese you prefer, like sharp yellow cheddar, milder white cheeses, muenster or jack, but make sure to use real cheese and stay away from low fat cheeses and pasteurized cheeses since these do not always melt evenly. After the pasta has completely cooled, add the half n half, egg yolks,and 3 tablespoons of butter. Stir to combine all of the ingredients.Next, pour the mixture into a greased 2 quart baking dish. Prepare a large piece of tin foil to cover the dish, by generously greasing one side of the foil with butter.Cooking the Perfect Mac and Cheese
Then cover the baking dish with the greased foil, butter side down. This will protect the Mac and Cheese from sticking to the foil during baking. Bake for 30 minutes at 325º. Then remove the foil and sprinkle 1/3 cup of the remaining cheese over the top and return to the oven to Bake until golden brown, about 25 more minutes.
