Transcript:How to Make Parmesan-Stuffed MushroomsHi, this is Jesse Rosado for About.com, and today, we're going to be making Parmesan-stuffed mushrooms.
Parmesan-Stuffed Mushroom IngredientsSo our ingredients for this dish are going to be:
- 8 stuffing mushrooms
- Loaf of sliced sandwich bread
- Fresh Parmesan cheese
- Pinch of black peppercorn and salt
- Couple of onions
- A pepper
- Fresh thyme
- Cayenne pepper
Preparing Mushrooms for StuffingSo the first thing I'm going do is - these are already washed, but I'm just going to go ahead and dunk them in some water, make sure they're nice and clean there. And then a good way to make sure your mushrooms are not going to be soggy is to make sure they're good and dry before you use them. This other part of prep with the mushrooms is to take the stems out of the center, just like that. You can take these stems - we're going to chop them up and use them to add mushroom flavor for the stuffing, but you can also save them for future use in omelets and other recipes as well. For the next step, I have a little melted butter here. I'm just going to brush each mushroom with a little bit of butter. So now we have our mushrooms just like this on a baking tray, nice and buttered.
Preparing the StuffingAnd so now, we're going to start working on the stuffing. Right now, we're just prepping the mirapoix for the stuffing. It's 50% onion, 25% carrot, and 25% celery. I'm putting some fresh herbs on top of this mirapoix here. This is fresh thyme; we're going to cut up some fresh parsley and put it in there. So I'm going to just chop up these mushroom stems so we have some nice mushroom flavor for the background of our stuffing. And I'm going to chop up the loaf of bread as well - it's the body of our stuffing. For a little flavor, I'm just going to use a little bit of our bell pepper here. So now it's time to go over to the stove and sauté our middle ingredients. I'm going to put in my cracked peppercorn and my salt. We've got our ingredients right there in the pan - we're going to get going and cook this for about eight or nine minutes.
Bake the Stuffed MushroomsSo we've gotten to a good point here with our mirapoix and mushroom stems, the onions are nice and translucent, the vegetables are soft, and now it's a good time to deglaze our pan with a little vegetable stock. So now I'm going to go ahead and drop my bread crumbs right into the pan with that liquid from deglazing it, and then I'm going to cover it and turn down the heat. I'm going to just spoon this into a bowl, still, as you can see, nice and hot. Next step is to take my Parmesan cheese and my grater, and I'm going to grate a good amount, maybe better than half a cup, put it on there. We're going to take a regular fork here and just kind of fork in all of this Parmesan and mix it all together. And I'm just going to go ahead and put in this filling, pile it high inside this mushroom. And I'm going to go into a 350 degree pre-heated oven for about 25 minutes. We have a nice tray of Parmesan-stuffed mushrooms!
