Transcript:How to Make North Carolina Pulled Pork
Hi I’m Chef William Richards for About.com. Today we’re going to barbeque a pork roast North Carolina-style. North Carolina barbeque is known for it’s slow-roasting process.North Carolina Pulled Pork is a Traditional Slow-Roast Recipe
We’ll be cooking this roast in the oven. North Carolina tradition involves a whole team of folks "watching the whole pig" over a low fire made up of oak and hickory. The pig roasts over an open fire throughout the entire day, while the team douses it with sauce every hour. We’re going to improvise a bit. This 3 1/2-pound boneless pork roast will cook 7 hours uncovered in a 275 degree oven and be basted hourly.Ingredients Needed for North Carolina BBQ Sauce:
- 3 cups cider vinegar
- 1 tablespoon sugar
- 1 tablespoon crushed red pepper
- salt and black pepper
Combine Ingredients and Boil the BBQ Sauce for Basting the Pork
Combine all the ingredients in a saucepan over medium heat. Bring to a boil than remove from the burner. You’re only going to use about 1 cup of this mixture for basting, the rest will be served on the side. Sprinkle salt and pepper all over your pork roast then place in an uncovered roasting pan.Allow the Pork to Cook Low and Slow While Basting Every Hour
Set your oven to 275 degrees and cook for about 7 hours. Baste the meat every hour with the vinegar mixture to get juicy results. Use a thermometer on the thickest part of the roast and check for a temperature of at least 200 degrees. Move the roast to a cutting board and remove excess fat. Slice or shred the meat with a fork and serve with the vinegar sauce. Have some hickory flavored barbecue sauce available too. Serve alone or as a sandwich.
