Transcript:How to Make Mississippi Sweet Potato Pie
Hi, I'm Stephanie Gallagher for About.com, and today, we're making Mississippi Sweet Potato Pie from our Southern Food site.
Ingredients for the Mississippi Sweet Potato Pie
For this recipe, you will need:
- 4 oz. butter, softened to room temperature
- 2 cups granulated sugar
- 2 cups cooked and mashed sweet potatoes -- you can use canned sweet potato puree or you can boil or bake the sweet potatoes, then peel and mash them
- 1 5-oz. can evaporated milk
- 3 eggs, beaten
- 1 tsp. vanilla
- 1-1/2 tsp. cinnamon
- 2 frozen pie shells, thawed according to package directions
Prepare the Mississippi Sweet Potato Pie
Preheat the oven to 350 degrees. Place the butter and sugar in a large mixing bowl, and beat until fluffy. Add the sweet potatoes, evaporated milk, eggs, vanilla and cinnamon. Now mix with an electric mixer until smooth.
Bake the Mississippi Sweet Potato Pie
Divide the pie filling among the two pie shells and bake for 1 hour. The pies are done when the edges are set, but the very center is still a little jiggly. Let the pies cool completely before cutting.
