Transcript:How to Make Mexican Chicken Casserole

Hey everyone, David Knupp here for Casseroles have always been a great and inexpensive meal to prepare for the family. And, they’re a great way to use leftovers. So I’m going to show you how to put some leftover chicken to good use and make an easy Mexican chicken casserole that the whole family will love.

For This Mexican Chicken Casserole Recipe, You’ll Need:

  • 1 can of cream of chicken soup.
  • 1 can of cream of mushroom soup.
  • 1 can of cheddar cheese soup.
  • 2 cans of diced tomatoes with green chilies.
  • 1 package of flour tortillas.
  • 2 cups of shredded cheddar cheese.
  • Extra virgin oil, or non stick cooking spray.
  • 13 x 9 inch pan.
  • 4 cups of shredded leftover chicken.

Prepare Your Chicken Casserole Mixture

You can easily shred the chicken with your fingers. If you don’t have a leftover chicken, you can boil a one pound package of chicken breasts until they are cooked thoroughly, and then shred them with a fork. Alternatively, you can also use four 12 ounce cans of pre-cooked chicken. Start by pre-heating your oven to 350 degrees. Liberally grease the bottom of the pan. In a large mixing bowl combine the chicken the three cans of soup and the diced tomatoes and mix well.

Layer the Casserole Dish With Tortillas and the Chicken Mixture

Put down a layer of tortillas in the bottom of the 13 by 9 pan, and make sure they overlap in the middle. If you want to make the tortillas uniform on the sides, you can use a sharp paring knife and work your way around the edge of the pan, removing the excess. Then spoon out about an inch deep layer of the chicken mixture. Then cover with a layer of tortillas, cutting away the excess tortillas on the sides, and another layer of the chicken mixture. You want to make sure you have enough room left in the pan so your top layer can be tortillas.

Top the Chicken Casserole with Shredded Cheese and Bake

Leaving about a centimeter of room left for the cheese. Cover the top evenly with the shredded cheddar cheese. Place in the oven and let cook for 30 minutes. Serve with sour cream or fresh salsa.
