Hi, I'm Stephanie Gallagher for About.com, and today, we're making low-carb stuffed mushrooms.Ingredients for the Low-Carb Stuffed Mushrooms
For this recipe, you will need:- 1 lb. medium mushrooms
- 3 Tbsp. butter
- 4 oz. cream cheese, softened to room temperature
- 1/4 cup crumbled blue cheese
- 1-2 Tbsp. chopped green onions
Cook the Mushrooms for the Low-Carb Stuffed Mushrooms
Preheat the oven to broil. Clean the mushrooms and remove the stems. Chop enough of the mushroom stems to equal 1/4 cup. It doesn't have to be exact. That looks about right.Now melt the butter in a large skillet over medium heat. Add the mushroom caps -- if you can't fit them all in, you may have to brown them in batches. Let them cook for about 5 minutes until golden brown. The key with browning mushrooms is not to move them a lot. Just leave them alone and let them release all of their water.
Ok, flip them over and cook for another minute or so on the other side.Now set them aside.
Fill the Low-Carb Stuffed Mushrooms
Place the cream cheese in a medium bowl. Add the blue cheese and mix well. Now add the green onions and the chopped mushroom stems. Mix well.Now fill the mushroom caps with the cream cheese mixture. You can use a cookie scoop, but you'll still probably have to use your hands to help out.
Place the stuffed mushrooms on a baking sheet, and broil 3-5 minutes until golden brown. These stuffed mushrooms make a great appetizer or snack, whether you're on a low-carb diet or not.
