Transcript:How to Make Healthy Crockpot Chicken Chowder SoupHi, my name is Krystyna Rittichier and I'm here for About.com. Today we're making a healthy crockpot chicken chowder using a recipe from About.com's Southern Food site." This recipe yields enough low-fat creamy chowder to serve six.
For This Healthy Crockpot Chicken Chowder Soup, You'll Need
- ½ Cup Chicken Broth
- ¼ tsp Black Pepper
- ¼ tsp Onion Powder
- 1 Potato
- 4 Green Onions Chopped
- ½ lb Boneless Skinless Chicken Breasts
- 2 Cans Cream-Style Corn
- 1/4 Cup Potato Flakes
- 1 Cup Skim Milk
- ½ Cup Shredded Cheddar Cheese
Adding Potato Flakes to the Soup Creates a Low-Fat Creamy TextureCut the chicken breasts into 1 inch chunks, and place these in the crockpot. Peel the potato, and chop this into ½ inch chunks. Place these in the crock pot also. Combine all the ingredients except for the potato flakes, milk and shredded cheese in the crock pot. Cover and cook the mixture on low 5 to 6 hours. The chowder is finished when the potatoes have softened and the chicken is fully cooked. If desired, you can cook the chowder on high to reduce the cooking time. When the potatoes have softened, add the potato flakes and milk to the crock pot. Stir the mixture, replace the lid, and cook for an additional 15 minutes. The chowder is finished cooking when the flakes have dissolved and the chowder has thickened. Top the chowder with the shredded cheese if desired, and then serve immediately.
