Transcript:How to Make Green Tomato CakeHi, I'm Sheilah Kaufman. Come visit me on my website, CookingWithSheilah.com. Today, I'm going to teach you how to make green tomato cake.
Green tomato cake originated back in the farming days as a way to use leftover tomatoes. Green tomatoes are just regular tomatoes picked before they're ripened.
Ingredients for the Green Tomato CakeFor this recipe, you will need:
- 2-1/4 cups sugar
- 1 cup canola oil
- 3 large eggs
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon of nutmeg
- 1 cup coarsely chopped pecans or walnuts
- 1 cup raisins
- 2-1/2 cups diced green tomatoes
Make the Batter for the Green Tomato CakeFirst, we're going to add the eggs and just mix for a minute, just to get them kind of incorporated, the sugar, the canola oil, and the vanilla and we're going to beat this on medium, really, really well.
Okay, let's take a look. That looks pretty good. Now we're going to sift. If you don't have a sifter you can use a fine meshed strainer. We're going to sift flour and about halfway through, we're going to add the salt, baking powder, cinnamon, nutmeg, and the rest of the flour. Sifting makes the cake lighter, nicer texture.
Now we're going to add the dry ingredients to the wet ingredients, but only on low speed. You only want to do this just until the flour is incorporated, and you want to stop partway through and take your rubber spatula and get all of the dry ingredients off of the sides of the bowl. And now we're going to add the remaining ingredients: the green tomatoes, the raisins and the coarsely chopped pecans, and just give it a quick whirl.
Bake the Green Tomato CakeNow we're going to spray a 9×13 inch cake pan and then we're going to bake it at 350 for about 50-60 minutes. Remember you're going to have to test it after about 50 minutes. Make sure your toothpick or your cake tester comes out clean.
This is a great make ahead recipe, just remember to allow the cake to cool completely, and then chill it in the refrigerator before serving. And personally I like it with vanilla ice cream, but you might want it with a wonderful cream cheese frosting. You're going to want to cut it in big thick slices so it retains its shape.
