Transcript:How to Make Easy Stuffed Pork Loin

Hi there! I’m Preston with About.com and today we’re preparing a delicious apple and apricot stuffed tender loin. Now tenderloins are sweet, they’re juicy, they’re low in fat and easy to cook. My favorite way to prepare it is by stuffing it. Let’s get started.

Stuffed Pork Loin Ingredients:

  • 2 pounds of pork loin roast
  • 1 peeled, cored, and diced Granny Smith apple
  • 6 minced dried apricots
  • 1/2 cup of Parmesan cheese
  • 1 tablespoon of olive oil
  • 1 teaspoon of fresh or dried sage
  • 4 cloves of minced garlic
  • salt and pepper to taste

Butterfly the Pork Loin

To start, trim any excess fat of the loin. We now need to “butterfly” the pork loin – you’re going to need a sharp knife to do this. First, cut down the center of the loin and fold it open like a book. Using a meat mallet, pound the butterflied pork until it’s about one inch thick. Pounding the loin will not only make it easier to roll, but will also increase its tenderness.

Mix the Pork Loin Stuffing

And now, for the stuffing. In a bowl, combine the apple, apricots, Parmesan cheese and sage and spread it over the butterflied pork. Now, we can pull it all together! Roll the pork loin back up and tie with some kitchen twine. The string should be spaced about two inches apart. Secure the loin tightly and preheat the grill. Remember, don’t tie too tightly otherwise the stuffing might squeeze out!

Sear Pork Loin on All Sides

Next, coat the outside of the rolled pork with olive oil and let it sit for about 15-20 minutes before placing it on the grill. While it’s sitting preheat your oven to 350 degrees. Here’s the tricky part. Once you’ve placed the loin on the grill, roll it around so each side gets about two minutes of direct heat – browning all sides of the meat.

Finish Roasting the Pork in the Oven

Then transfer to a shallow baking dish, cover it with foil and place in the preheated oven to continue cooking for about 30 minutes. Once cooked, take the loin out of the oven and let it sit for about five minutes so the juices in the meat redistribute. This process will make the meat nice and tender!
