Transcript:How to Make Easy Brown Sugar-Glazed Carrots

Hi! This is Jesse Rosado for Today we're going to be talking about how to make easy brown sugar carrots.

Ingredients Needed for Brown Sugar-Glazed Carrots:

  • Regular carrots or baby carrots
  • Brown sugar
  • Butter
  • 1 cup water
  • Salt and pepper
  • Maple syrup (optional)

Trim Whole Carrots or Use Baby Carrots for the Recipe

It's a very easy recipe. You just go ahead and peel and chop some carrots, or if you want to make it super easy, you can pick up a 16 ounce bag of baby carrots. Just combine the ingredients right inside the skillet. I'll go ahead and show you how right now.

The way I find easiest is to put it on my cutting board in the center, with the big side down at a 45 degree angle. My left hand holds the carrot, my right hand holds the peeler. And I slice through, and with my left hand I spin the carrot a little bit, and I'm going to repeat the process. The next part is to trim off the little nub on the end right there not caught by the peeler, and then this end, this little spot is where the carrot top was cut off, I like to take that off as well.

Now if we're using whole carrots like this one, what I like to do is cut them like 3/8 of an inch, sliced, just sliced on a bias - it looks a little bit more fancy.Now we're ready to get our recipe started here. We want to start with a nice hot pan, and we're going to do the easy  way with 16 ounces of baby carrots.

Cook Carrots in a Skillet with Butter and Brown Sugar

You start by putting in about 2 tablespoons of butter, get it working in the pan. Add the carrots here, pour them in. While we're waiting for that butter to melt, we'll put in some fresh ground pepper, and a little salt. I'm going to put my brown sugar in, make sure your brown sugar is firmly packed. Go ahead and break it up when it goes into the dish here. I'm going to let this cook for just a minute to let it get a little color, let the butter get good and melted, brown sugar getting warm there. I don't want to cook that brown sugar, I just want to get it warm and start to liquefy. Then go ahead and dump in my cup of water there, all the way around. And then I just stir in all those ingredients, get them nice and incorporated together.

Cook Carrots Until They Are Al Dente

You want to cook this meal on medium-high for about 20 minutes or so, uncovered or a good way to check is just to see if these carrots are al dente. So as this is cooking down, I'm going to add a little shot of maple syrup, just to give it a little maple flavor. You could also make maple-glazed carrots, just by omitting the brown sugar and adding 1/3 cup of maple syrup. So now that we're finishing up our dish here, you can see that we're getting a little bit of a glaze going, I'm going to go ahead and turn off this heat. This dish will pair well with any savory meat - from pork, some roast pork, a nice beefsteak,something like that.
